Two Separate Cravings

The other day, Mark and I had a little conversation via text message that went something like this...

Mark:  For some reason I've been craving yogurt and strawberry banana cake.

Me:  Is that one thing or multiple things?

Mark:  2 different cravings.

Me:  Oh, that's funny.  (I don't know that it really was funny, but what else do you say in a conversation like this?)

Anyway, it got me thinking...and I thought, why should they have to be two separate cravings...I wonder what it would taste like to put yogurt into cupcakes?  Well, you know me and my experimenting ways.  I'm not afraid to toss a few extra ingredients into a baking mix and see how it turns out.  (Remember my frappuccino cupcakes a while back?)

...and so, I give you the Strawberry Banana Yogurt Cupcake...

I'm not really one who bakes entirely from scratch...instead, I just like to "spruce up" pre-mixed packages by adding a few ingredients here and there.  For this recipe, I started with a Pillsbury strawberry cake mix...

...followed the instructions on the box to add the eggs, oil, and water...but then I added in some fresh bananas, strawberries, and two yogurt cups (strawberry/banana flavor)...

For the frosting, I took a pre-packaged container of vanilla frosting and mixed it together with a tub of Cool Whip.  This was another experiment, and I think it turned out pretty well.

When it came time to bake, I followed the instructions on the back of the mix box...but, I kept a close eye on them to make sure they cooked up right.  I've found that adding additional ingredients into the mix can sometimes throw-off the time that it takes to bake, so I always set my timer a few minutes earlier than the recommended time, and add time if needed until they are baked through-and-through.

These cupcakes took a little longer to bake than the recommended time, but that was because I used the tall cupcake liners instead of the standard size.  When they came out of the oven, I couldn't help but decorate one, and sit down for a fresh-baked treat.

As pretty as it looked, it didn't last long...

That cupcake had disappeared before anyone could say, "going, going, gone!"  ...and, let's be honest...you know that I ate more than just one.  Ha!

When Mark got home, he happily enjoyed three of them in one sitting.  Yep, one right after the other.  Gone, gone, gone.  Let's just say, of all the cupcakes I've made these are the only ones that were eaten by just the two of us within a 2 day period.  It's a bit embarrassing, but I guess I'm just a sucker for a home-baked treat with a cherry strawberry on top!
